There's a Hawaiian restaurant down the street from work that serves Spam sushi - Spam and sticky rice wrapped in nori. It's surprisingly good.

Edit: never knew sushi was about the rice. I always thought it was about the fish.

Sushi uses a specific type of rice with some vinegar added. May or may not include seafood though traditionally most often does, often raw.

Mmm, that delightful sticky rice that I've never been able to duplicate at home. The fish part I like too, but only pre-approved ocean- and lake-going creatures are allowed. Salmon, tuna, crab, lobster, whitefish. Nothing that squirts ink, nothing with claws, nothing with tentacles, nothing that resembles a snake. No eyeballs. No eggs.

The Ginger Spam Salad (and Spam Confetti Pasta) sound both horrifying and... enticing. I may have to act upon this.

Me likey all sushi/sashimi. If the chef can get it onto a serving plate I will eat it, eggs, eyeballs, tentacles, green gooey innards, pleas for mercy and all. I esp. love chewy, chewy tentacle parts. Just think of it this way...that squid would eat you in the blink of an eye if it could. I never try this at home though I do buy sushi rice at the grocery store. Have even gotten a close approximation of such in my own kitchen. Never quite the same though. I would eat sushi for every meal if it wasn't so spendy.

There used to be a spam restaurant near me, many years ago called Pinks. Everything on the menu was spam based. It was okay, I guess. My father was a Spam man. I am not.
