Hah, you're too 1337, Botch! I summon NPC phantoms all the time, I like using what the devs put there, and sometimes it makes the boss fights way better (see: Dragonslayer Armor of Dark Souls 3).
Having said that, I soloed more bosses on my first run of Bloodborne than the Dark Souls games; not sure why but it just played out that way. I summoned help for Rom and Amelia because they both had me feeling hopeless. Two hardest bosses for me.
I don't really know anything about the Old Hunters -- what does the DLC add, Botch? New area? New chalice dungeons? Neither, both?

The DLC adds a new area. It's actually a nightmare version of Cathedral Ward. So the normal layout is hugely distorted. You start in Oeden chapel, or rather a slightly modified version of it. From there you head out into the Ward, but it quickly becomes almost unrecognizable. There may be other areas as well, I'm not sure. And I know nothing about whether it adds more Chalice Dungeons.
It appears to follow the standard Souls DLC formula, which is fine by me.
Speaking of Chalice Dungeons, the later ones just get ridiculously tough. There are either mobs of very tough enemies, or ones which can easily one-shot you. That said, I've spent quite some time in them, mostly doing co-op.
I think if I had to rank them, Bloodborne might just be my second favorite Souls game (close race with Demon's Souls). I like Dark Souls 3 but it just seems too tidy and sterile. Dark Souls, for all its messy systems and inconveniences, just felt more genuine.

Have you fought the "end boss" of the chalice dungeons? I think the name is .. Yharnam, Pthumerian Queen? Something like that. It felt to me that, once again, the devs buried one of the best boss fights in a very optional area. This is a thing you should do once in a game series. Not like, fourteen times.

I've not even opened any Isz dungeon, and have only dabbled in Ailing Loran. The Pthumerian and Hintertombs I've mostly finished. How on earth did you make it so far given the ridiculous difficulty?
Isz makes me think of the boss you defeat to get that chalice. I wrecked that boss with my first character, who used Ludwig's Holy Blade. Going against it with the Blades has been an exercise in frustration. That's the thing about the Blades: they seem great against normal enemies but give me a tough time against bosses.
Yeah, hiding a great boss behind all of the dungeon tedium was a big mistake. All of the Youtubers I watch for Souls Let's Plays had big ambitions for doing the dungeons, then after realizing how boring it would be to go through them all on video, eventually bailed.
Bloodborne did make its share of mistakes, but they mostly felt like the designers trying to innovate yet just not getting it right the first time. So in general, I forgive them.
